The Cook Book: Chicken Enchilada Bake


I love learning new recipes especially easy ones or ones that actually come out right!
I've decided to start The Cook Book, a way for me to share some of my favorite recipes
and for some of my favorite bloggers to share theirs!

I'm kicking off The Cook Book today with an easy recipe a friend gave me a few years back.

Chicken Enchilada Bake



I'm going to list the ingredients I used, but feel free to add in things or take things out!

::Ingredients::
tortillas (small white or yellow corn)
chicken
cheese (shredded)
rice (i use knoll rice sides)
beans 1 can (i used black)
corn 1 can
green chili sauce <--this is not spicy! 
sour cream
olives
tomato
*this version I'm showing you makes about 8 servings*

I usually prepare the chicken by putting it in the crock pot with a cup of the green chili sauce,
it makes my house smell yummy and the hubby thinks I cooked all day!
Really you just need to prepare chicken the easiest way for you, fully cooked & shredded.

Preheat your oven to 425 degrees
In a bowl mix the chicken and 1/2 of the green chili sauce, move aside and 
prepare your rice (its super fast if you do the microwave instructions), 
next drain then mix the corn and beans in another bowl.



Now take a baking pan and line with tortillas.
I used a pan that fit 6 tortillas and makes about 8 servings, 
so use your judgement on how much you want to make!
Then spread 1/2 of the chicken onto the tortillas.



The next part, there is no right or wrong just start making layers and make sure to make at least
one more layer of tortillas right in the middle!
So after the chicken I layered rice, tortillas, beans/corn, chicken and cheese!



After you have the bulk of your ingredients into those layers, you will just add the final touches.
Use the rest of the green chili sauce and drizzle along the top.


Add another (the last) layer of tortillas and lightly pat down.


Generously spread a layer of cheese


Pop it in the oven and let bake for 20 min!


While that's in the oven I prepared a little topping of tomatoes and olives


Once the 20min are up pull it out, let cool just a bit and cut down the middle and then into squares.
It should look like a little pile of yumminess!


My husband likes his plain 


But I think the more the better and I love extra goodies plus lots of sour cream!!!
