The Cook Book: buttermilk bacon buscuits w. glaze


Today I want to introduce you to the most adorable, sweet and seriously smart-ass funny girl Jacqui whom I had the pleasure to hang with at Snap last month.  I promise it had nothing to do with the fact that she had a purse full of caramel candies with her at all times.

Hey! I'm Jacqui of Baby Boy Bakery and I've got something amazing for you so keep reading! In my neck of the woods I'm considered the "health nut" who eats a crap ton of desserts and bacon. Sometimes together...sometimes 3 times a day. I have a passion for eating organic and keeping leafy greens a staple in my families diet. But lets face it...I make desserts for a living and a girl likes to indulge every so often. (Key word being-often) I've come to realize I just like to eat. Period. I truly believe everything is good for you...in moderation. Take pleasure in what you eat always! Words to live by right there folks!


Today I want to share with you a glorious creation I made while an a hot pursuit to satisfy my craving for biscuits, pancakes and bacon. I started making the biscuits and my fiancee' started making the bacon...while our son watched Sesame Street. A few minutes later I was mixing the bacon into the biscuit dough and the rest is history! I hope you enjoy!



What You Need
(Note; You do not need organic ingredients. Its what I use in my kitchen, however you can rock this with what you buy...it will still taste great!)

--Biscuits--
2 1/2 cups flour
1/2 cup COLD butter
3 tsp baking powder
1 tbs sugar
5 strips of cooked bacon
3/4 cup shaken buttermilk
1 large egg
1/2 tsp pure vanilla

--Glaze--
1 cup organic powdered sugar
1/2 cup organic 100% pure maple syrup
1 tbs water

Directions

-Mix your dry ingredients

-By hand mix in your cold butter, until it is all incorporated.
The butter and flour should form tiny balls the size of peas.





-Mix in your wet ingredients

-Crumble in bacon and mix well.



-On a floured surface roll out dough. The dough will be wet and sticky. Use flour to help you manage it.

-Cut biscuits


-Place on a parchment paper lined baking sheet. I like to wash the tops with the left over bacon grease....you know to add an extra layer of yummy goodness. It makes the tops so moist and really nails down that bacon flavor.


-Bake at 375' for 20 minutes. Be sure to turn pan at 10 minutes.

-Let them cool completely. In the mean time mix up your glaze.

-For the glaze, just mix all the ingredients together. If its too runny mix a little more powdered sugar. If its to think mix a little more syrup or water. You'll know when its the perfect texture for drizzle.



-When the biscuits are ready, drizzle the glaze and devour!!

    Bacon. In a biscuit? I'm confused. But they do look good. In fact so good I'm gonna try this! Your assitant looks well cute with the chefs hat!! :)
