The Cook Book: chocolate dipped strawberry cookies


With the New Year brought on new resolutions goals that I've been trying to keep up with.  They included having the blog full of posts as often as possible while keeping up on orders (whew, overwhelming sometimes!!), maintaining my home and having time for myself.  One of my friends Gina made a comment about The Cook Book section being a little sparse -so true!- and although it was on my list of goals.. it wasn't at the top of that list by any means.

This is where Gina has stepped in to help! Not only will I have other recipes in here, but she will be a contributor on here twice monthly to help keep up with it! So I hope you enjoy seeing recipes a little more often then not, and find time to create some of the things we share here.



Hello Just Love.ly readers!  I am so happy to be here today {and in the future} as the new Cookbook contributor.  Since Valentine's Day is right around the corner, I am going to share with you a fun Valentine's Day cookie recipe.

I love chocolate covered strawberries.  Actually, I love any fruit with chocolate.  It is such an amazing combo.  So, rather than showing you how to make plain ole' chocolate covered strawberries, I decided to make a yummy strawberry cookie and dip it in chocolate.



I make up recipes all the time.  It is one of my favorite things to do.   Sometimes, my recipes are a total fail and sometimes they are a total eat-the-whole-thing-in-one-day success. You will be happy to know that this recipe is one of those success stories.

Dark Chocolate Dipped Strawberry Cookies


Ingredients:
*3 cups all purpose flour
*1 teaspoon baking soda
*1/2 teaspoon salt
*1/2 cup unsalted butter {at room temperature}
*1 1/4 cup white sugar
*2 large eggs
*1 cup of strawberries {mashed}
*1/4 cup of strawberry jam
*dark chocolate {about a bar will do}
*red sprinkles {optional}

1. Heat the oven to 350 degrees.
2. In a large bowl, whisk together the dry ingredients {flour, baking soda, and salt} and set aside.


3. Using an electric mixer, cream together the butter and sugar until nice and fluffy {mix for about a minute}.
4. Add the eggs to the butter/sugar and continue to mix until for about another minute.    Then mix in the jam and mashed berries.


5. Dump your dry ingredients into your wet ingredients and mix until just combined - be careful not to over-mix!
6. Spray your baking sheets with non-stick spray {or line them with parchment paper} and spoon out equal portions of dough.  Sprinkle the cookies with the sprinkles {if using} and bake for 12-15 minutes.  Immediately remove cookies from the baking sheets and allow to cool.
7. Once the cookies are cooled, melt the chocolate.  I just break up a bar of dark chocolate into bite-sized pieces and microwave for about 1 minute and 30 seconds....pulling the bowl out every 30 seconds to stir.
8. Dip the cookies into the melted chocolate.  I half dipped my cookies and then placed them on a platter lined in waxed paper.  Once all the cookies were dipped, I set them in the refrigerator for about 30 minutes so that the chocolate would harden.


These cookies are soft and cake-like and they have a lovely mild strawberry flavor.  Plus, they are dipped in chocolate and most things taste better dipped in chocolate.
